Dried whole chickpeas graded to 8mm, cream-beige in colour with the familiar rounded, slightly wrinkled shape. After soaking they cook to a firm, creamy texture, hold their shape in sauces and blend smoothly for hummus and dips. The consistent 8mm grading gives even soaking and cooking across a batch, which matters in large-scale production.
