White basmati is a milled long grain aromatic rice with slim, white grains that lengthen noticeably during cooking. It cooks to a dry, fluffy finish with separate grains and a distinctive fragrance, which is why restaurants and meal producers use it for pilau, biryani and plain boiled or steamed rice. It stands up to batch cooking and holding for service.
