Pine nuts are small, ivory-coloured kernels with a soft texture and a delicate, slightly resinous flavour. They crush easily into sauces, which is why they are the standard nut for pesto, and they toast to a golden colour in a few minutes for use as a garnish. Kitchens and manufacturers use them whole in salads, bakes and stuffings.
