Almond flour is almonds milled to a fine, pale meal. It brings fat, moisture and a mild nutty flavour to a recipe, giving a tender, close crumb in cakes and a smooth finish in frangipane, macarons and marzipan-style pastes. Manufacturers buy it ready milled to avoid grinding whole nuts in-house and to get a consistent particle size.
