Medium currants are small, dark dried grapes with a sharp-sweet flavour and a firm, slightly chewy bite. The medium size distributes evenly through doughs and batters, which is why bakeries use it for buns, scones and fruit cakes. The fruit holds its shape through mixing and baking and takes up soaking liquor readily in mincemeat and fruit loaf production.
